1 large egg
1/2 c milk
1/4 c sugar
2 tsp cinnamon
1 1/2 tsp vanilla extract, divided
1 1/2 c cold marscapone cheese
2 T blackberry liqueur
1 thick (3/4 inch) slices of day-old wide French bread or Challah bread
1/4 c maple syrup
2 1/2 c blackberries
2 T butter

Preheat griddle to medium heat. (This can also be made while camping, with a charcoal grill or a camp stove.)
Whisk egg, milk, sugar, cinnamon and 1/2 tsp. vanilla together in large bowl.
Stir marscapone, remaining 1 tsp. vanilla and the liqueur together in another bowl. Spread marscapone mixture over 4 bread slices; top with remaining slices.
Cook maple syrup and berries in a small covered saucepan until berries start to break down, 5-10 minutes. Remove from heat.
Serve French toast.

Cindy (our second cousin) and Aryk prepared this as part of a "camp cooking" session one Sunday. The recipe is way too complicated for camping, but is the most scrumptious French toast ever made. (Lisa added the Challah bread option, from living in NYC)
