1 cup brown rice
7 ounces Italian sausage
1 medium onion, diced
1 green pepper, diced
3 cloves garlic, minced
8 ounces canned kidney beans, drained
1 bay leaf
2 tomatoes, chopped
1/2 teaspoon cajun seasoning
Salt and pepper to taste

Directions:
Directions:
Cook rice. Set aside.

Cook sausage, and slice.

Saute onion, green pepper, and garlic for about 5 minutes.

Add 1/2 cup water to beans, and heat for 5 minutes. Add tomatoes and bay leaf, and cook for 15 minutes. Stir in cajun seasoning, cooked rice, and sausage. Cook for about 10 minutes. Season with salt and pepper.
