1 1/4 c graham cracker crumbs
2 tbsp melted butter
1/4 c sugar
(5) 8oz bricks cream cheese, softened
1 1/2 c sugar
3 tbsp flour
1 1/2 tsp lemon juice
1 tsp vanilla
dash salt
5 eggs
2 egg yolks
1/4 heavy cream

Butter Springform pan. Combine graham cracker crumbs, butter and sugar. Press into bottom of pan. Refrigerate. In large bowl, beat cream cheese until smooth. Add sugar, flour, lemon juice, vanilla and salt. Beat until smooth and light - appx 5 minutes. Beat in eggs and yolks, one at a time, until light and fluffy. Blend in cream. Pour into crust. Let stand 10 minutes. Bake at 425º for 10 minutes. Reduce oven to 250º DO NOT OPEN OVEN DOOR. Bake 65 minutes. Remove. Run knife around edge of pan. Cool 1 hour. Cover and refrigerate 4 hours.
