2 ½ lbs. yellow squash ( 3 large)
1 large carrot, grated
2 teaspoons Pimento (I leave out)
1 cup cream of chicken soup (or mushroom)
½ pint sour cream
Salt and pepper
½ cup margarine
8-10 oz. stuffing mix (bread crumbs or cube type)

Directions:
Preheat oven 375. Boil and drain squash. Mix in carrot, soup and sour cream. Add salt and pepper to taste. Melt margarine and mix with stuffing. Place ½ of stuffing mixture in bottom of casserole. Add squash mixture. Top with rest of stuffing. Bake 30 minutes. Can also be frozen.
