6 white corn tortillas
1 lb boneless, skinless chicken breast, cut in small chunks
salt and pepper
2 T. olive oil or canola
2 small red bell peppers, diced
1 onion chopped
1- 4 oz. can green chilies, drained
3 cloves garlic, minced
1 T. chili powder
1 tsp. cumin
14 oz. chicken broth
2 C. lowfat milk
2- 15 oz. cans hominy, drained
1/2 C chopped cilantro

Directions:
Directions:
Place tortillas directly on stove top, set at med/low and toast turning frequently with tongs until light golden. Cut into 1" wide strips and set aside.
Season chicken with salt and pepper and saute with 1 T oil until browned, set aside.
Saute onion and peppers. Add rest of ingredients and simmer.
Add chicken and warm.
Serve with tortillas on top
