Prime rib... mmmm..

Here's an injection recipe, I have a hard time scaling things down so make sure to taste and adjust accordingly.

1 can beef broth about 2 cups
1/2 cup Pepsi, coke, or root beer
1 TBLS Worcestershire sauce
1/4 c minced garlic
1/8 c minced rosemary

Put all ingredients in small pot, bring it to a boil, reduce to a simmer for 3-5 min. cool in refrigerator then strain. inject prime rib about every 2 inches. put prime in frig for at least 24 hours.

Prime Rib Rub

1/4 c oil
1/4 c minced garlic
1/4 c minced rosemary
1 TBLS crushed red pepper

Place all ingredients into small pot bring up to a light simmer for 10-15 min. put in frig to cool down. once completely cooled add following ingredient:

1 c honey
2/3 c Stone ground mustard- start with half cup...
3 TBLS Dijon mustard
1 TBLS Worcestershire sauce
salt and pepper to taste

mix well rub it on prime rib kinda thick. Place prime rib on a roasting rack in a pan. make sure fat side is up. Place in 250 degree oven for about 1 1/2 hour - 2 hours or until middle temps out at 105 to 110. let rest for at least 20 min. and dig in

Horseradish sauce

3/4 c sour cream
3/4 c hot horseradish
1 TBLS honey
1 tsp lemon juice
1 tsp Worcestershire
salt and pepper to taste

I love Tasha's cooking!! Every time I come home Tasha always cooks me a fantastic meal. Tasha is more then a friend she is family. Tasha has always been there ready to help at a drop of a hat. When Travis died she showed up at my dad's house, and the next day was at Travis's house helping . I can always count on Tasha , from helping me gut a bathroom to taping off trim to drinking some Jaguar, and making me laugh. Tasha is there to do what ever it takes. I am so grateful for her.
