1 gallon cold Water
1/2 C. Kosher Salt (reduce to 1/4 C. if using regular table salt.)
2/3 C. Brown Sugar

Directions:
Mix brine together well with a whisk.
Place 1 whole chicken (thawed or frozen- you may also use chicken parts) in brine for 4 hours up to overnight. Cover and store in the refrigerator.
Remove chicken from brine and rinse chicken well. Pat dry with paper towel. You are now ready to make a tender juicy chicken dish of your choosing.

NOTES: You can also do this with turkey. If doing a whole turkey, you will need to double or triple the recipe so you have enough brining solution. Put your turkey in a large clean plastic bag you can close with a closure. One gallon of brine is enough for 6 pounds of whole chicken or bone-in chicken pieces, and up to 10 pounds of skinless, boneless chicken breasts.

Brining increases the moisture and flavor of the meat by pulling water into the muscle of the meat through osmosis. You can add whatever seasonings you like to the brining solution and they will also be pulled into the meat.
