About 1/2 package pitted dates, coarsely chopped
2 shallots, thinly sliced
1 container crumbled goat cheese
3-6 slices of bacon
1 3/4 lb boneless, skinless chicken breasts
1 1/2 tsp garlic/herb seasoning
1/4 tsp pepper
1 Tbsp vegetable oil
1 C white wine

Chop dates, slice shallots, and cut bacon into 1/2 in pieces.

Preheat large, deep sauté pan (with fitted lid) on medium-high 2-3 min. Season chicken with herb seasoning & pepper. Place oil in pan, then add chicken. Cook 2-3 minutes on each side or until browned. Remove chicken from pan.

Reduce heat to medium and add bacon. Cook until crisp. Add shallots and dates, cook 2 more minutes.

Remove pan from heat. Add wine and return chicken to pan. Reduce heat to low and cover. Simmer 10-12 minutes or until chicken is no longer pink (reaches 165º).

Remove chicken from pan and cut into slices. Spoon date mixture on top of chicken, sprinkle with goat cheese, and serve.
