Apples ( 35-40 )
41/2 c.sugar
1 c. quick cooking tapioca
1 tsp. salt
2 tsp. cinnamon
1/4 tsp. nutmeg
10 c. water ( I used 4 c. apple juice an 6 c. water)
3 tbsp. Lemon juice (to be added with the peeled apples)

Mix the dry ingredients before adding to the liquid.
Put liquid in a large canner. Stir in dry ingredients and put on very low heat. Peel, core and slice apple and put in water with 3 tbsp. lemon juice. Soak 5-6 peeled apples in the lemon water to keep from turning brown. Then take apples out of lemon water and add to mixture on the stove. Stir frequently. Peel more apples and repeat until all apples have been peeled,cored and sliced. The mixture should be simmering by now. Let simmer until you have prepared jars. (7 jars), Put cold water in your two kitchen sinks and set two large containers in the sink. Pour apple mixture in container to cool. When cooled down fill jars and put in water bath to seal.
Bring water to a boil for 25 minutes. (you can also freeze this.)
