Whole Roasted Cauliflower

2 1/2 cups dry white wine
1/3 c olive oil plus more for serving
1/4 c kosher salt
3 T fresh lemon juice
2 T unsalted butter
1 T crushed red pepper flakes
1 T sugar
1 bay Leaf
1 head cauliflower with stem trimmed and leaves removed

Whipped Goat Cheese

4 oz fresh goat cheese
3 oz cream cheese
3 oz feta
1/3 c heavy cream
2 T olive oil plus more for serving
Coarse sea salt for serving

Directions:

Combine the first 8 ingredients to make a winey punchy broth.

Heat broth in large pot and once hot, lower in the whole cauliflower and poach for 15 min
Basting the cauliflower with the poaching liquid

Place cauliflower on a roasting pan and set in a 400º oven until brown and crackled. Depending on the temperature of your oven, it should take about 30 minutes.

While the cauliflower roasts combine the ingredients for the goat cheese sauce.

Remove cauliflower from the oven and sprinkle with salt and a little more olive oil. Cut into wedges and serve with the goat cheese sauce.
