4 large yams
1/2 c. margarine
2 c. sugar
1/4 c. heavy whipping cream
2 1/2 - 3 tsp. cinnamon
1/2 tsp. nutmeg
couple dashes of ground clove
1 - 1 1/2 tbsp. real maple syrup
1/2 tsp. vanilla
2 tbsp. corn starch

Preheat oven to 350ºF.

Peel and wash yams. Cut off tips and throw away. Cut yams into 1/2" circle slices. Cook yams by boiling, The yams should be soft not crunchy with a fork poke however not mushy as they will be cooked again with the sauce. Drain. Spread in a 9X13" baking dish or 2 L casserole dish.

In a medium size pot melt butter over medium heat. Turn down heat so as careful not to burn. Add sugar and stir till blended. Add whipping cream and stir to mix. Remove from heat stir in cinnamon, nutmeg, clove, maple, vanilla and cornstarch. Taste the mixture to be sure tastes yummy, adjust spices if needed. Pour mixture over yams.

Cover with lid or foil. Bake 15 -20 minutes till hot. If you have not cooked the yams enough previously you may need longer. Stir before service being careful not to mash the yams.

This recipe was a big hit. The trick is to not have the sauce too runny. If you find it is runny remove some liquid add more corn starch and return back to mixture cooking 5 more minutes.
