1/4 pound of boneless saltfish (cod)
1 medium onion, minced
1 garlic clove, mashed
1/2 congo pepper (medium hot)
1 tablespoon salt
1/4 cup butter or cooking oil
2 pounds cassava, peeled and cut into cubes

Directions:
Directions:
Boil the cassava in salted water until cooked, then drain.
Soak the saltfish in 2 cups of water for 5 minutes.
Break fish into smaller pieces.
Preheat a frying pan to high using the butter or cooking oil.
Add garlic, pepper and onions and cook for 3 to 4 minutes.
Add saltfish and boiled cassava and lower the heat and simmer and stir for another 3 minutes.
Add butter and serve with fresh fruits on the side.
