2 TBSP olive oil
8 ounces yellow onion, diced
8 ounces celery, diced
8 ounces carrots, diced
1 ounce garlic buds, minced
1 ounce dry Italian seasoning
32 ounces crushed tomatoes and juice
80 fluid ounces (2.5 quarts) vegetable stock or chicken stock
1 ounce sea salt, or to taste
8 ounces zucchini, sliced 1/4 inch thick
4 ounces green leaf kale, thinly sliced
16 ounces canned cannellini beans, rinsed and drained
20 ounces rotini, cooked and drained
1/2 oz white sugar, optional

Preheat stock pot to a medium high setting. When hot, add oil, onions, celery, and carrots. Stirring occasionally, cook until edges are lightly caramelized. Add garlic and Italian seasoning and cook an additional minute. Deglaze kettle by adding tomatoes and juice, stirring to combine. Add stock and sea salt to the mixture and bring to a boil. Add zucchini and kale and cook over medium heat with the lid closed for 10 minutes. Add cannellini beans and cook an additional 5 minutes, stirring occasionally. Turn off heat. Add cooked pasta and stir to evenly combine before serving.
Note. The feathery tops of fennel work well in this soup, too.
