1 1/2 lbs. flank steak
Stone ground mustard
1/2 lb. thick sliced bacon
2 large onions, sliced
1 (16 0unce Jar) Kosher Dill pickle spears
2 T butter
2 1/2 cups water
1 cube beef bullion or 1 cup beef stock-omit one cup water

Cut flank steak into thin filets: about 1/4 inch thick and 3 inches wide.
Generously spread one side of each filet with mustard. Place bacon, onions and pickle spears on each filet and roll it up. Fasten with a toothpick. Heat a skillet over medium heat with butter. Sauté rolls until browned on all sides. Pour in 2 1/2 c of water and bouillon cube or 1 1/2 cups water and one cup of beef broth and simmer rolls for about 1 hour. Serve with spaetzle or gnocchi to soak up the wonderful gravy!
