1 medium to large eggplant
1/3 cup chopped green bell pepper
2 Tablespoons margarine
1 lb. ground beef
¼ cup dry bread crumbs
1 Tablespoon chopped chives
1 ½ teaspoon salt
1/8 teaspoon pepper
½ cup grated cheddar cheese, divided into ¼ cup each
1 medium chopped tomato or 1 small can tomato sauce
1 egg beaten

Half eggplant lengthwise. Scoop out center leaving ½ inch shell. Set pulp to the side. Cook eggplant shells in boiling water for 3 minutes. Drain well. Dice eggplant pulp. Sauté with green peppers in margarine for 5 minutes. Combine meat, bread crumbs, chives, salt, pepper, ¼ cup shredded cheese and egg. Mix well. Shape mixture into 2 equal size balls. Press each ball into the eggplant shells. Place into baking dish. Bake 375 for 30 minutes. Remove from oven, put remaining cheese and the tomato sauce or diced tomato on top. Return to oven for 20 minutes longer.
