Crust:
2 c. all purpose flour
1/2 c. sugar
1 tbsp. lemon zest
3/4 c. butter chilled and cut into chunks

Filling:
1 1/2 c. sugar
1/3 c. fresh lemon juice
1/4 c. all purpose flour
1/4 tsp. salt
4 large eggs
1 tbsp. lemon zest
1/2 tsp. baking powder

Meringue:
4 large egg whites
1/2 c. sugar
Pinch salt

Directions:
Directions:
Preheat oven to 350ºF.

Crust:
Combine flour, sugar and lemon zest in a large bowl or food processor.
Mix in butter until mixture resembles moist sand.
Pour into a 9x3 baking dish and spread evenly.
Press mixture to create a firm, even layer.
Bake crust for 20 minutes or until edges are lightly brown.

Filling:
Combine all filling ingredients in a large bowl or food processor.
Mix until smooth.
Pour filling mixture into baked crust and return to oven for 17-20 minutes or until filling is set.

Meringue:
While filling is baking prepare meringue by beating egg whites to soft peaks in a large bowl.
When the egg whites begin to foam add the sugar and salt gradually while beating.
Spread prepared meringue evenly over the baked and set filling and return to oven for an additional 8-10 minutes or until peaks begin to lightly brown.

Cool completely on wire rack before cutting into bars with a slightly damp knife.
