1 red onion, thinly chopped
6 large cloves garlic, thinly sliced
1/2 stick butter
5 sprigs thyme
2 cups white wine
1 can whole peeled tomatoes
I large bundle parsley
4 lbs mussels
3 scallions chopped
Salt
Pepper

Directions:
Directions:
Saute onions and garlic in butter and thyme. Add wine. Chop about 8 whole tomatoes and add a cup liquid. Bring to a boil. Add mussels to pot, sprinkle 1/2 cup chopped parsley, cover. Reduce heat to medium and cook 5 minutes, stirring twice. Pour mussels and liquid into a big serving bowl, top with another 1/2 cup chopped parsley, and scallions. Serve with French fries or pasta.
