2 very ripe medium banana
1 cup seeded dates or dried prunes
1/8 cup brown sugar
1/8cup hot water
2 tsp vanilla
1/2 tsp cinnamon
4 cups quick oats*
1/2 cup, or more chopped nuts
handful of dried unsweetened coconut (optional)
1/2 cup, or more dried fruit
1 TBS Honey

Preheat oven to 275
Puree banana and dates in a food processor or blender, blend, add hot water, brown sugar,vanilla,cinnamon and about 1 TBSP honey, blend.

In a large mixing bowl add quick oats, nuts, coconut mix and add the banana mixture and mix well, Spread on large rimmed cookie sheet, sprayed with vegetable spray, crunching parts together with your hand to make little globs. Bake 1 to 1 1/2 hours stir/turn with spatula often until light brown. If mixture does not hold together to your liking after about 45 minutes, drizzle a little more honey on and blend in. Let cool in pan and add dried fruit to your liking. It will crisp and brown more as it cools. Keep in air tight jar.

*I used old fashioned oats the second time and it was not crunchy and too chewy. I ended up throwing it out. I read that Quick oats are just as nutritious as old fashioned. 4 cups is one of the regular sized 400 gram oatmeal boxes.

I threw my whole raw almonds in the processor at the end and pulsed, off and on to chunk them up, easier then chopping.
