Chicken & Stuffing Bake Recipe

Ingredients: 3 - 4 chicken breasts (I used skinless boneless)
1 Package Pepperidge Farm Stuffing (cubes) 2 stalks celery 1 small onion 1 Tbsp Poultry Seasoning 1 Stick butter
1 can (14 oz) chicken broth 1 can Cream of chicken soup – or Campbell’s cream of chicken & herb 1 can Cream of celery or cream of mushroom soup (I used mushroom)

Directions:Cook chicken. I put in water and bring to boil then reduce to simmer for about 10 minutes or so. Cool a little then cut into bite size chunks.
Sauté celery and onion in 2 TBSP butter Mix in stuffing mix. May add a little bit of chicken broth and melt rest of butter in and mix.
Put ½ of mix in bottom of 12 x 9 baking dish. Put in chicken as a layer Mix the soups together then out over chicken and stuffing Put rest of stuffing on top.
Bake at 350 for 45 – 1 hour.

Notes: NOT low calorie - but definitely a comfort food meal. You can precook chicken however you like. Could substitute boneless skinless thighs also.
