2 1/2 C. flour
1 1/4 C. sugar
3 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
3 eggs
3/4 C. applesauce
1/2 C vegetable oil
1 tsp. vanilla
2 C. grated carrots
1 medium tart apple, peeled and grated
8 oz. can crushed pineapple, drained
1/2 C. flaked coconut
1/2 C. raisins
1/2 C. chopped walnuts

Directions:

Preheat oven to 350. In a large bowl, combine first five ingredients. In another bowl combine the eggs, applesauce, oil and vanilla. Stir into dry ingredients just until moistened. Stir in carrots, apple, pineapple, coconut, raisins and nuts. Fill greased muffin cups 2/3 full. Bake for 20-25 minutes before removing from pans to wire racks. Makes 24 muffins.
