For chicken: 1 c. dry white wine, 1/3 c. olive oil, 3 tbsp. brown mustard, 3 tbsp.
white wine vinegar, 2 tsp. salt, 2 or 3 bay leaves and 1/2 tsp. of the following: thyme, marjoram, parsley, tarragon, celery seed and crushed red pepper flakes.

For steaks: 2 tsp. cumin seeds, 2 T. dark roast coffee beans, 1 T. chili
pepper, 1 tsp. sweet paprika, 1 tsp. salt and 1 tsp. pepper. Grind in a coffee mill or food processor.

OR

2 tea bags Earl Grey, 1 tsp. whole peppercorns, 1 tsp. dried tarragon, and 1 tsp. dried thyme. Grind in a coffee mill or food processor.

Put a bit of olive oil on steaks before adding rub.
