2 or 3 large potatoes
6 strips of bacon cooked and crumbled
1 small onion, chopped (or 2 green onions)
1 can cream corn
1 c milk
2 tbsp flour
salt and pepper to taste
1/4 c sour cream

Directions:
Directions:
Peel and dice potatoes. Cook potatoes and onions in enough salted water to completely cover. Mash slightly.

While potatoes are cooking, fry bacon. Remove from pan and drain on paper towel. Save bacon drippings. Blend flour into bacon drippings. Stir in milk.

Cook and stir until thick and smooth. Add flour mixture and cream corn to potatoes. Salt and pepper to taste. Blend in sour cream and heat through, stirring constantly. Add bacon just before serving. Garnish with parsley if you don’t use green onions.

**it is easier and neater to chop bacon before cooking.
