24 ounces small redskin potatoes, quartered
16 ounces asparagus, cut into pieces
24 ounces cooked roast beef, rough chopped
1 red bell pepper, chopped

Dressing:
4 tbsp olive oil
4 tbsp vinegar
2 tbsp Dijon mustard
2 cloves garlic, chopped
2 tbsp parsley
1 tsp salt

Directions:
Directions:
Cook potatoes and asparagus in salted boiling water until tender, drain.
Add chopped roast beef and red pepper.

Mix all dressing ingredients together then add to above.
