6 tbsp olive oil
3 tbsp red wine vinegar
1/2 tsp each oregano and basil
salt and pepper

1 - 1 1/2 cups orzo pasta
1 cup chopped tomato
1 cup chopped cucumber
1/2 cup each red and yellow pepper
1/3 cup chopped red onion
24 kalamata olives
3/4 cup crumbled feta

Directions:

In a small bowl whisk oil, vinegar, basil, oregano, salt and pepper. Set aside
Cook pasta for about 7 minutes or until tender. Drain and rinse with cold water. Drain well and place in a large bowl. Stir in dressing. Stir in tomato, cucumber, peppers, onion and olives. Cover and let stand until serving. Refrigerate if longer than 1 hour. Top with feta cheese.
