2-3 chicken breast halves, cooked and cubed
1½ c. long grain rice cooked in 3 c. water and 1 t. salt
2 cans cream of chicken soup
1½ c. sour cream
8 oz. Ritz Crackers (2 sleeves), crushed – about 2 c.
½ c. margarine, melted
1 Tbsp. poppy seeds

Preheat oven to 350°. Mix cracker crumbs, poppy seeds and margarine. Set aside. Mix together sour cream and soup. Add cubed chicken, rice and half of the cracker mixture. Pour into a greased 9 x 13-inch pan and top with remaining cracker crumb mixture. Bake, uncovered at for 30 minutes.
*Can be made ahead and refrigerated but increase cooking time to 45 minutes. Can also be a freezer meal.
