½ cup finely diced cooked ham, chicken, pork
2 tbsp. oil
3 finely diced mushrooms
1 qt. cold cooked rice
1 finely chopped green onion
2 tbsp. soy sauce (more if needed to darken color)
1 beaten egg

Directions:
Directions:
1. Fry meat of choice in hot oil. Add mushrooms, rice, green onion, and soy sauce.
2. Fry over low heat for 10 minutes.
3. Add 1 egg, cook and stir for 5 minute. Add more soy sauce if needed to darken color.
