Directions:
Cook 1 chicken until tender. Cut off bone into bite size pieces. 1 medium size loaf of bread (can use 1/2 corn bread). 3 eggs well beaten, 1 small onion, 1/4 t celery salt, 1/4 t pepper, 1 t salt, and sage or poultry seasoning. Mix bread crumbs, onion, eggs and seasonings with a little broth of chicken (just enough to moisten). Pour dressing mixture in baking pan, put chicken on top and press down into dressing. Top with cracker crumbs (2 doz crackers), melt 1/4 lb butter and pour over cracker crumbs. Bake 1 1/2 - 2 hours at 350º
