1/2 c. brown sugar
2 eggs, yolks and whites separated
1 1/2 c. buttermilk (or 1 1/2 c. regular milk with 1 1/2 tbsp. vinagar)
1/2 c. molasses
6 tbsp. better, melted
2 c. flour
3 tsp. baking powder
1 tsp. baking soda
2 tsp. ginger
1 1/2 tsp cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg (can use pumpkin pie spice in place of ginger, cinnamon, cloves and nutmeg)
1/2 tsp. salt

Directions:
Directions:
In a small bowl, mix brown sugar and egg yolks until creamy. Stir in buttermilk, molasses and butter.

Into a large bowl, sift together flour, baking powder, baking soda, salt, and spices (I use pumpkin pie spice instead of cinnamon, ginger, cloves, and nutmeg).

In a separate bowl whip egg whites with an electric mixer until stiff peaks have formed.

Add liquid mixture into sifted dry ingredients and stir together. Fold in egg whites.

Cook waffles.

Serve with buttermilk syrup. The syrup recipe is included in this cookbook. Another yummy topping is lemon curd cream (lemon curd purchased at a store mixed with whipped topping to lighten it up). Sooooo Yummmmmmy!
