1 ½ pound of ground pork
2 eggs
2 cups chopped fresh mushrooms
2 cups chopped fresh bean sprouts
1 egg
1 tsp salt
1 package egg roll wrappers

Directions:
Directions:
Saute the ground pork in a medium skillet until just cooked through.
Add rest of ingredients and the pork into a large mixing bowl and mix well.
Place about 2-3 tbsp in center of egg roll wrapper.
Dip your finger in a small bowl of water and wet all edges of wrapper.
Wrap egg roll tightly, following directions on the egg roll package.
Add vegetable or canola oil to a deep fryer OR add to a pot to a level of about 5 inches and bring to a temperature of 350 -375 degrees.
Using tongs, add 2 or 3 egg rolls to pan and fry until brown all over. Remove with tongs and drain on paper towels. Continue until all egg rolls are browned.
Serve warm or room temperature. Use a prepared sweet and sour sauce.
