3 tbsp. flour
1 tsp. salt
1/2 tsp. celery salt
1/4 tsp. garlic salt
1/4 tsp. black pepper
1/2 tsp. ginger
3 lbs. chuck, cut into 2 in. cubes
2 tbsp. bacon fat or shortening
1 lb. can tomatoes
3 medium onions, sliced
1/3 c. red-wine vinegar
1/2 c. molasses
6 - 8 carrots, cut into 1 in. diagonal pieces
1/2 c. raisins

Directions:
Directions:
1. Combine the first 6 ingredients and sprinkle over beef cubes.
2. Brown in bacon fat (or shortening) in a large heavy skillet or dutch oven.
3. Add next 4 ingredients ad 1/2 c. water.
4. bring to a point, cover, and simmer about 2 hours.
5. Add carrots and raisins and simmer 30 minutes longer or until carrots are tender.
6. Serve with rice, cornbread, or green salad.
