Nonstick vegetable oil spray
1 3/4 cups all purpose flour
1 1/2 teaspoon baking soda
3/4 teaspoon kosher salt
3 large eggs
1 1/2 cups sugar
1 1/2 cups mashed bananas -- about 3 large ones
3/4 cup vegetable oil (if you have macadamia nut oil, use it here)

Directions:
Directions:
Preheat oven to 350 degrees.
Coat pan(s) with cooking spray
Whisk flour, baking soda, and salt in a medium bowl. In a separate bowl, mix eggs, sugar, bananas, and oil until smooth.
Add dry ingredients to banana mixture and stir just until combined. Scrape batter into prepared pan(s).
Bake according to times given above, based on the pan(s) you're using.
Transfer to a wire rack; let cool for 15 minutes.
Run a knife around inside of pan to loosen. Turn out onto the rack to complete cooling.

These are best baked in three small loaf pans ( 5 3/4 X 3 1/4-inch pans) but you can do them in a large pan, too.
Cooking time for 3 small pans is 40-45 minutes
Cooking time for 1 large pan is 60-65 minutes
