Beets (peeled and cubed, no greens)
Salt and Pepper
Olive Oil
1 tablespoon fresh Rosemary
Balsamic Vinegar
Blue Cheese Crumbles

Directions:
Directions:
Toss beets, salt, pepper, and olive together and place on baking sheet. Roast at 425º F stirring occasionally until tender. Remove from oven and toss with chopped rosemary and several tablespoons of balsamic vinegar and blue cheese crumbles. Let sit until cheese is gooey and serve.
