3/4 bag frozen hashbrown potatoes
1 cup cheddar cheese, shredded
1 can mushroom soup
250 mL tub of sour cream
1 small white onion
2 tbsp. butter or margarine
salt and pepper
parmesan cheese (optional)

Directions:
Directions:
Cut and fry onion in butter or margarine. Mix frozen hashbrowns, soup, sour cream, and shredded cheese in a large bowl. Mix well. Add cooked onion. season with salt and pepper. Mix again. Pour into greased casserole dish or baking pan. Sprinkle with parmesan cheese if desired. Bake at 350º for 1 hour or until casserole is browned around the edges. The crispier the better!
