4 slices bacon, cut into 1/2 in. pieces
1 onion, chopped
2 lbs. Yukon gold potatoes (approx. 6), thinly sliced
1 c. Shredded Cheddar Cheese
Directions:
Directions:
1. Cook bacon until crisp and drain on a paper towel. Reserve 3 Tbsp. of bacon grease in skillet.
2. Add onion to skillet; cook and stir for 5 minutes.
3. Stir in potatoes; cover. Cook on medium-low heat 20-25 minutes or until potatoes are tender, stirring occasionally.
4. Top with cheese and bacon; cook, covered for 1-2 minutes or until the cheese is melted.
