Pork:
1/4 cup soy sauce
1/4 cup Bourbon
2 tablespoons brown sugar
3 or 3/4 pound pork tenderloins

Sauce:
1/2 cup sour cream
1/3 cup mayonnaise
1 tablespoon finely chopped green onions
1 tablespoon dry mustard
1.5 tablespoons vinegar

Pork:
Combine soy sauce, Bourbon, brown sugar, and pork in a resealable bag. Marinate, turning occasionally, for a minimum of two hours or overnight, in the refrigerator. Remove pork from marinade. Roast on a rack in a shallow roasting pan in a preheated 325º oven for 30 minutes or up to one hour to desired doneness. Baste occasionally with marinade. Slice in thin diagonal slices. Serve with Green Onion Sauce.

Sauce:
Combine the first five ingredients in a mixing bowl; season with salt. Refrigerate until ready to serve. Yields 3/4 cup.
