12 new scrubbed potatoes
2 TBS olive oil
4 oz cream cheese, softened
1/2 cup sour cream
1-1/2 grated Jack cheese
1 TBS minced chives
1 garlic clove, finely minced
salt and pepper to taste

Directions:
Directions:
Preheat oven to 375. Drizzle potatoes with oil and toss to coat. Roast for 20-25 minutes or until tender. Halve the potatoes. Use a spoon to remove the insides, leaving a small margin of potato intact. To the scooped out potatoes, add cream cheese, sour cream, cheese, chives, garlic and salt and pepper. Mash until potato mixture is totally smooth. Give it a taste to ad more salt if needed. Scoop the potato mixture back into the potato shells. At this point you can cover and refrigerate until dinnertime. Bake the potatoes for 20-25 minutes or until golden brown on top
