4 oz bacon
1 TBSP olive oil
1 cup sliced mushrooms
1-2 cloves copped garlic
1/2 cup chopped onion
2 eggs
1/4 tsp pepper
3/4 cup grated Parmesan or Romano cheese
6 oz spaghetti
1 cup reserved pasta water
Optional fresh basil

Cook spaghetti al dente, drain, SAVING one cup of water.

Whisk eggs, pepper and 6 TBSP cheese in a bowl.

Cook diced bacon in a large frying pan until crispy and brown, remove bacon and set aside. Wipe pan with paper towels, add olive oil, heat, add onions saute on med high heat until onions start to sweat 2-3 minutes, add mushrooms and garlic, and saute a few more minutes.

Pour HOT reserved pasta water in pan with the mushroom mixture, add spaghetti and stir. Slowly add egg mixture stirring constantly until it makes a thick sauce 1-2 minutes add remaining cheese and 1/2 of the bacon. Serve and garnish with remaining bacon and basil.

Original Carbonara uses cream, and sometimes peas and no mushrooms added. This is my take on a tasty healthier version. If I had an Italian Grandmother, she would be rolling over in her grave!
