3 cups flour
3/4 tsp salt
1tsp baking soda
2 cups brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 cup chopped pecans or walnuts
3 eggs
1 cup vegetable oil
1 8 oz can drained crushed pineapple
2 cups mashed RIPE bananas
2 tsp vanilla.
optional hand full of shredded coconut

Directions:

Preheat oven to 350

Mix all ingredients in a large bowl, pour into a greased 9X4 loaf pan. Bake 1hour and 10 minutes. I like mine sliced, and spread with cream cheese.
