12 ounces spaghetti, I like whole wheat pasta
1 can (15 ounces) diced tomatoes with liquid, flavored is fine too. *
1 large sweet onion, cut in julienne strips
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes, more if you like it spicy
2 tsp Italian seasoning or oregano
2 large sprigs basil, chopped, save some for garnish
4 1/2 cups vegetable or chicken broth
2 tablespoons extra virgin olive oil
salt and pepper to taste, careful if your broth is salted
Parmesan cheese for garnish

This is so simple, quick and delicious, the only thing you really need to measure is the broth and pasta. Too much, or too little, will make it too dry, or too soupy.

Break spaghetti in half and place in a large pot. Add every thing else except Olive oil and Parmesan cheese. Give it a stir, drizzle oil on top, cover and bring to a slow boil and turn down to a simmer. Stir every few minutes. Cook until almost all the liquid is adsorbed about 1/2 inch should remain in the bottom of the pot and pasta is done.

Serve, garnished with fresh basil and Parmesan.

I saw a similar recipe and wanted to make it for dinner. I had no canned tomatoes, or broth. I used 2 cups fresh ripe tomatoes with their juice, and in a large measuring cup put about 1 cup V-8juice, water and 2 tsp Caldo Pollo (powdered chicken broth) to measure 4 1/2 cups. You can tweak this recipe any way you want as long as the liquid and Pasta are measured.
