1 pound dry navy beans (2 cups)
3 quarts water
1 meaty ham bone or 2 smoked ham hocks
3 onions, chopped
2 or 3 celery stalks and tops, chopped
1/4 cup parsley
1 clove garlic, pressed
1/2 cup potatoes, cooked and mashed
1 tsp. salt
1/4 tsp. pepper
1ybs. brown sugar, optional
2 tbs. catsup, optional

Directions:
Directions:
Rinse beans. Cover with water in a 4 quart kettle or Dutch oven. Bring to boil; simmer 2 minutes and cover. Let stand off heat for 1 hour. Add ham bone; cover and simmer 2 hours.
Add remaining ingredients and simmer for 1 hour. Remove ham bone.
Cut off meat and return meat to soup. Mash beans slightly with potato masher and season with salt and pepper.
