2 hard boiled eggs
2 slices bacon
1 onion, chopped
1/2 cup lettuce, shredded
1 slice bread, shredded
1 tablespoon fresh parsley, chopped
1/2 teaspoon paprika
1/2 teaspoon prepared mustard
1/2 teaspoon salt
2 tablespoons mayonnaise

Cut long thin carrot strips with vegetable peeler, each at least 4" long. Make 50. Roll round your finger and insert toothpick. Chill in ice water. Fry bacon until crisp and crumble. Saute onions in bacon fat. In a bowl, mash the eggs and the rest of the ingredients; mash well. Fill in carrot curls and refrigerate.
