1C shortening (she used lard)
1 1/2 C brown sugar
1 tbsp. ginger
1 tbsp. cinnamon
1/2 tsp. salt
1 C baking molasses
2 tbsp. soda dissolved in 2 tbsp. hot water, fill to 1 C and let stand to cool

Directions:

Cream together shortening, brown sugar. Add ginger, cinnamon, salt, and molasses. Mix well. Add water with soda dissolved in it and add enough flour to make the dough stiff enough to roll out. Refrigerate overnight

Next day, roll out cookies, cut in circles, bake at 350º until done.

This recipe too has been in the family for generations. Aunt Katie (and later, her daughter Veronica) always kept a crock of these cookies in the dirt-floored cellar. Whenever company came, out came the cookies.
It looks difficult, but with our modern mixing appliances, they are not so difficult to make. And they are delicious.
