8-10 medium bell peppers (green and red)
Small amount of olive oil
2 lbs. ground turkey
½ tsp. salt and ¼ teaspoon pepper
1 small onion, finely chopped
3 cloves garlic, minced
1 7-oz can roasted red peppers, minced
1 can tomato paste
1 jar marinara sauce (tomato and basil)
1 tsp. paprika
½ c. parsley leaves, chopped
½ - 1 tsp. cumin
1 ½ c. jambalaya rice
Manchego or Mexican shredded cheese

1. Preheat oven to 350-375 degrees
2. Cook rice as usual – set aside
3. Cut tops of peppers and reserve lids. Microwave peppers until slightly softened (~ 45 sec per pepper)
4. Mix meat, salt and pepper, onion, garlic, red peppers, paprika, and cumin
5. Heat a small amount of olive oil in a large skillet over medium heat. Add meat mixture and brown while chopping/stirring occasionally.
6. Mix tomato paste and marinara sauce until good consistency and add to meat.
7. Add cooked rice and parsley
8. Pour marinara sauce into oven safe baking dish to create a bed for the peppers to sit on.
9. Fill each pepper up half way with meat filling. Top with a little cheese. Filler more meat filling and then sprinkle top with cheese.
10. Place the tops back on each pepper as a lid.
11. Bake 20-30 min
