12-15 baby red or yellow potatoes (about 1-1/2-2 inches in diameter
2`3/4 tsp kosher salt
1/2 cup Extra virgin olive oil

Directions:
Directions:
Precook potatoes in salted water, about 30 minutes, until tender.
Let potatoes cool slightly, cover with dishtowel and smash potatoes with your palm to about 1/2 inch in thickness. Let potatoes cool to room temperature on baking sheet, lined with foil. Heat oven to 450. Sprinkle potatoes with 3/4 tsp of salt and pour olive oil over and under potatoes. Cook for 30-40 minutes until crispy. turning over halfway through.
