2-1/2 lbs of small red potatoes
2 yellow onions
3 T olive oil
2 T whole-grained mustard
salt
1 t pepper

Directions:
Directions:
Heat oven to 425. Line sheet pan with non stick foil. Cut potatoes in halves or quarters, depending on size. Make uniform. Slice onion into half rounds, about 1/4 inch wide. Toss onions and potatoes with oil and mustard, 2 t salt and pepper. Bake for 50 minutes or until potatoes are lightly browned on the outside and tender inside. Toss from time to time to keep from burning. Sprinkle with extra salt with done.
