3 T. butter
3 T flour
2 c milk
Blue cheese, crumbled
salt, pepper
Left over turkey, sliced
Toast
sprouts

Directions:
Directions:
Slice leftover turkey, set aside.
In small pan, heat butter over medium heat, add flour to make a roux. Stir in milk and keep stirring until thickens. Add blue cheese to taste and salt and pepper.
Toast bread, put slices of turkey on top, spoon over sauce. Add crumbled blue cheese to top with sprouts.

My dad used to make these sandwiches after Thanksgiving dinner with leftovers. It is a staple in our house over the holidays. We also sometimes make with leftover rotisserie chicken.
