2 Tbs Butter
2 Tbs All Purpose Flour
1 Large Onion chopped
2 (14 1/2 oz) cans Chicken Broth
3 Large Potatoes, peeled and cubed (or use red or yukon gold potatoes if you want to leave the skin on)
1/2 Tsp Salt
1/4 Tsp Pepper
1 C Milk
1C of Water
1/4 C Corn Meal

Toppings:
1 bunch of Green Onions, sliced
Grated Cheese
Sour Cream

Directions:
Directions:
Cook cubed potatoes in a little water in the microwave for 6-8 minutes to soften. Drain liquid.

Melt butter in large sauce pan, whisk in flour. Add chopped onions and saute until clear. Whisk in broth until smooth. Add potatoes, salt, pepper.

Combine 1 cup of water and 1/4 cup cornmeal and stir until dissolved.

Add to potato mixture and cook approx. 15 minutes until potatoes are tender and liquid thickens some. Stir in milk and heat through.

Top with cheese, green onions and sour cream.

Makes 7 cups.
