Ingredients:
2 eggs
shredded cheese

Optional Ingredients:
chopped mushrooms
chopped ham
chopped peppers
chopped onions
chopped tomatoes
cooked pieces of bacon or real bacon bits
salsa

Directions:
The amounts and types of optional ingredients depends on the size of group that is eating.
Crack the eggs directly into a medium-sized Ziploc freezer bag (do not use sandwich bags as they are too thin), then add any of the optional ingredients you desire. Seal the baggy and mix the ingredients thoroughly by shaking the bag or squishing it with your fingers. Check the clock, then you and up to 4 others can set the labelled baggies into a large pot of boiling water for 13 minutes (for a 3 egg omelet it's 15 minutes). Carefully remove the baggies from the water (tongs work well), open the bag and let the omelet roll out onto the plate.

Personal Notes:
For a different variation, try putting the omelet into a tortilla wrap.

Note: Limit the number of bags or use a large enough pot to ensure the baggies are not pressed against the side of the pot continuously. Enjoy!

Our family enjoys making these for breakfast when camping.
