1 pound grated coconut
6 cups flour, grated nutmeg
1 teaspoon salt
2 tablespoons baking powder
1 package dry yeast
2 cups brown sugar
2 tablespoons grated ginger
2 + 1/2 cups water (for kneading flour)
1 teaspoon dark vanilla essence
3 tablespoons lard
1 cup raisins
1 teaspoon grated nutmeg
1/2 lb. butter or margarine
Dash of grated nutmeg
Dash of cinnamon
2 tablespoons melted brown sugar (for basting on bread)

Directions:
Directions:
Preheat oven to 400º F.
Mix all dry ingredients together, then add water.
Let stand for 5 to 10 minutes.
Break into dough balls.
Shape bread to fit on top of an open baking sheet.
Lower the oven to 350º F and bake for 35 to 40 minutes.
Mix melted brown sugar with warm water and brush over top the bread.
Bake for an additional 5 to 10 minutes, until golden brown.
Cool and serve with butter or jam.
