3 large eggs
1/2 cup sourdough starter, fed or unfed
3/4 teaspoon salt
1 cup All-Purpose Flour
1 tablespoon Gluten (optional)

3 tablespoons butter
1 tablespoon jam of choice

Directions:
Preheat oven to 450º F, with muffin or popover tin. In microwave or saucepan heat milk until it feels slightly warm to the touch.

Combine milk with eggs, sourdough starter, and salt then mix in the flour. Lumps are okay, over mixing is not. The batter should be thinner than pancake batter, about the consistency of heavy cream.

Carefully remove hot pan from pre-heated oven, spray thoroughly with non-stick spray. Quickly pour the batter all the way to the top into alternating cups in the muffin tin, or using a popover tin pour as usual, to leave space for the popovers expansion.

Bake for 15 minutes, reduce heat to 350º F and flip tin around to bake an additional 15-20 minutes till golden brown. Remove from oven and serve immediately with a mixture of your favorite jam with butter for added flare!
